El Salvador – Sweet, Mild, and Grown with Care
Our coffee from El Salvador comes from the renowned Las Isabellas farm, a stunning example of how quality, sustainability, and natural beauty can come together to produce something extraordinary. Nestled on the south face of Cerron Grande in the Apaneca region of western El Salvador, this farm produces exceptional coffee thanks to its ideal altitude, fertile soil, and the dedication of those who care for it.
Situated between 1,200 and 1,450 meters above sea level, Las Isabellas benefits from the cooler temperatures and slower cherry maturation that high-altitude coffee growing provides. This slower ripening process develops deeper sweetness and more complex flavours, resulting in a cup that is elegant, balanced, and full of character.
A Farm with Natural Riches
Las Isabellas is not just a coffee farm—it’s a thriving ecosystem. The property spans 175 acres of natural forest, interspersed with natural springs and waterfalls. This biodiversity plays a vital role in protecting soil health, preserving water resources, and supporting local wildlife.
The farm is proudly Rainforest Alliance certified, ensuring that it meets strict environmental, social, and economic sustainability standards. This certification reflects the farm’s commitment to protecting the environment while producing coffee of the highest quality.
Varieties that Define the Cup
The coffee from Las Isabellas is a mixture of Pacamara and Bourbon varieties.
-
Pacamara – A hybrid variety developed in El Salvador, Pacamara is famous for its large beans and distinctive flavour profile, often offering fruit-forward notes and a silky mouthfeel.
-
Bourbon – A classic Arabica variety known for its sweetness, balance, and refined chocolate tones.
Together, these varieties create a cup that is smooth, sweet, and layered, with a unique El Salvador identity.
Part of the Blue Harvest Project
Las Isabellas is part of the Blue Harvest project, a program focused on improving water resource management in coffee-growing areas. The initiative helps farmers protect and enhance the quality of water sources while also improving the resilience and profitability of their coffee farms. This means that when you enjoy a cup from Las Isabellas, you’re supporting both sustainable coffee production and vital environmental stewardship.
The People Behind the Coffee
The farm is owned and managed by Jose Roberto Santamaria, whose dedication to both the land and the people who work it is evident in every harvest. Jose oversees not only the farm’s agricultural practices but also the on-site mill, ensuring quality control from the moment the cherries are picked to the time the beans are ready for export.
Flavour Profile
Our El Salvador coffee from Las Isabellas is sweet and mild, with a smooth body and a clean finish. On the palate, you’ll find delicious flavours of plums and chocolate—a combination that’s both comforting and subtly complex. The plum notes add a gentle fruitiness, while the chocolate tones bring warmth and richness.
The overall impression is one of balance and approachability, making it a perfect coffee for those who enjoy sweetness without overpowering acidity.
Roasting for Sweetness and Clarity
We roast this coffee to a medium level, carefully chosen to highlight its natural sweetness while allowing both the fruit and chocolate notes to shine. This roast preserves the elegance of the Bourbon while showcasing the vibrant character of the Pacamara.
